An Ode to the Rice Cake.

I Heart Rice Cakes.

The Rice Cake is God’s way of saying “Hey Caitlin, you really are a wondrous being of light and splendor and you shall be rewarded for it.”

Don’t laugh, its a true story.

So why do I heart the rice cake so much…..well for the following reasons.

1. Tuna melt.

No kidding – the people in your office will salivate over YOUR lunch when you walk by with your rice cake piled high with tuna and melted cheese. You see unlike bread, the rice cake does not go soggy in the microwave. So pile it up and pile it on, the rice cake tuna melt WILL NOT let you down.

2. Garlic Bread.

I loved garlic bread in my gluten days. I often fantasized about garlic bread and its various uses…but alas that is no longer an option for me. You know what else is no longer an option, GLUTEN FREE BREAD. I’m sorry but I’d rather chew rusty coat hangers than eat that stuff. So, when faced with this type of problem I did what any good gluttie would do…I threw a hissy fit and demanded that Boyfriend fix all the worlds problems immediately.

Well when that didn’t come to fruition I decided maybe I should think of something. Oh and I did, Rice Cake Garlic Bread!!! GENIUS! There were a few bumps in the road but I finally perfected it. Just take some butter and freshly pressed garlic. Melt them A LITTLE in the microwave. Spread onto Rice Cake, add shredded cheese and place back in the microwave for 15 seconds.

GARLIC BREAD, GARLIC BREAD, GARLIC BREAD!!!!!

And the rice cake stays decently firm during this whole process! WOOT WOOT.

3. Sandwiches.

As mentioned above I HATE GLUTEN FREE BREAD. So sandwiches seemed to be out of my reach…until God sent me the rice cake. Now you too can do your best Jared impression and eat sandwiches three times a day for 10 years straight. SANDWICHES!!!!

The rice cake acts just like your bread. It is a vessel used to bring the ingredients to your mouth. I would however recommend that you do more of an open faced sandwich. Two rice cakes can be a little dry. Never has a PB&J been so wonderful. I thought I had lost it forever.

4. Dips.

Those wonderful little mini-rice cakes are fabulous. Fabulous for scooping, shoveling, caressing and inhaling dip. They form a little bowl shape which means maximum cake to dip ratio – enabling you to get more dip in your mouth than a traditional rice chip. Its really just a one bite bowl of dip sensation.

So that’s what I love about rice cakes. Trust when I say that there are many more reasons than stated above – those are just the highlights. I beg of you all, please consider the rice cake as a gift. A gift given from God directly to every Celiac and gluten intolerant person on this planet.
