Chevy Bread – Like a Rock!
Participating in the Weekend to End Breast Cancer brings a different level of challenges for Celiac’s. The event provides all it’s participants with three well rounded and nutritious meals a day – everything a body needs to stay going for two days of intense walking. They even provide participants with ample snacks along the route everyday. What this translates into for Celiac’s is a lot of food that we can’t eat – pasta, grilled seasoned chicken, bagels, high sugar snacks etc. Not so much what my body needs.
Enter Fiance and BCFF and their culinary skills. Every stop along the way, every meal over the weekend had to be made fresh and brought to me on the route. One of those meals included a chicken sandwich. I needed the protein, I needed the starch, I needed food.
As we all know, the building block of a good sandwich is the bread. If time had allowed it, I would have preferred to use GF Patisseries sandwich bread – but alas, time did not allow it. We were riding the roller coaster of life all the way to the start line. So in an attempt to have the best sandwich I could – I made my own bread. We have looked at this box a million times and the instructions seemed easy enough – so I tried…

And failed.
Glutino’s line of Gluten Free Pantry products are normally really good. This looked like it would be good as well. It even came with the bakers yeast that we needed. As I was mixing the bread everything seemed to fall into place and it looked like I thought it should. But I’m domestically challenged, so when the bread didn’t rise like I thought it should, I knew that it wasn’t going to end well. I decided to hold steady on the course and put the loaf in the oven. It smelt amazing. Even Fiance was positive about it, he thought it was great to smell bread cooking – a luxury that he never gets. But, the smell was about the only thing that came out well.
The bread came out like a rock – hence the birth of what we now call Chevy Bread. It was as dry and thick as the other GF breads you can buy in the freezer section of your grocery store. Mission not accomplished.
A myriad of things could have gone wrong – the picture on the box could have been a misrepresentation, the yeast could have failed at it’s job, or more likely, I have horrible karma in the kitchen and it came back to bite me in the butt. I’m thinking that it’s all a possibility!
So all in all, I say try it for yourself. You may have better results than I did. We found this at Superstore if you’re inclined to give it a go. If you don’t want to even bother with all of this – make time and go to GF Patisserie, they really do make the greatest sandwich bread of all time.

Sorry to hear about the bread Caitlin – have you tried either of Bob’s Red Mill? Both are excellent – my husband likes the Hearty Grain one – it is very dark like a pumpernickel with seeds. The other amazing good bread mix – makes a great white loaf – perfect for grilled cheese or french toast……….but yes the holy grail of bread is for GF Patisserie…………

Caitlin- did you do the WTEBC last year(2008)? and if so- did you end up in the medical tent?
I’ve been following your blog (and loving it) since I was diagnosed Celiac, and as I was reading your Weekend posts I remembered having a fellow celiac patient in the Med Tent.

That was me for sure! I think it’s you that I have to thank for the miracle of pickle juice – it made all the difference in the world. Speaking of world – what a small one!
I’m so happy you like the blog. Were you at the event this year? You’ll be happy to know that I didn’t end up in the med tent this year! Which I think is a feat in and of itself.

I am in Red Deer and get mine at Sobey’s – I would think in Calgary you should be able to find at Community Health or Planet Organic…or Sobeys. I have attached a link to their website so you can have a looksie:

LOL- yes, the pickle juice was me. I hope you passed on that pearl to other walkers this year!
I wasn’t at the walk this year- I just couldn’t get the time away from football camp. I’m planning to make the switch to “Walker” for 2010 though– perhaps its time WTEBC has Celiac Friendly meals? I’m sure there’s more than just us!

Oh I’ve passed that pearl on to everyone that would listen – now I can give credit where it is due! We’re slowly taking over, I met three more Celiac’s on the walk this year. Although I won’t lie – the family has the food part down to a science now and I don’t know if I want to pass on such great food!

That’s odd. I just made the exact same bread two days ago and it came out great. I use a breadmaker though. Glad you live close enough to go to GF Patisserie. I am jealous!

Hi Carol.
I think it’s great that you had a good experience with the bread. I’m so anti-domestic that I never know if it’s me or the product that isn’t working. Usually it’s me, so I like to warn people about that. We don’t have a bread machine and I think that might make all the difference.
