Confession: Glutastic is also lactose intolerant.

I’ve known this for awhile, but thanks to fancy Lactaid pills I’ve been able to ignore it. Well, not anymore – or at least for now.

Doctor Lady says NO LACTOSE for the time being, while we try to figure out why my insides hate me. And unfortunately, what Doctor Lady says, goes.  So no cheese, milk, yogurt etc for me.

I’m not going to lie – the inner, stubborn, youngest child in me needed to have the last word. So I did. I convinced Fiance to help me bid farewell to lactose by making a cake doused in icing.

I just wanted one piece before I had to say good bye to lactose!

Thanks to my loving, patient and totally accommodating Fiance, here is what we created.

Oh ya. Go Hard or Go Home!

The cake itself is a mix of vanilla and chocolate cake mix from Celimix. For a GF boxed cake mix, these are good. You can usually find them at Superstore and Co-op. The icing is Duncan Hines Buttercream frosting. (ha ha you didn’t actually think I would do any of this from scratch did you?) And the piping, colouring and overall awesomeness is a combo of Fiance’s Art Minor and my OCD.

The best part of this exercise in stubbornness, is that by the end of 2009 we are going to be inundated with new nieces and nephews. We can now be the Aunt and Uncle that bring the cool allergy friendly cake to the parties! Really, kids don’t care if their cake if GF as long as it comes with a Disney Princess or Thomas the Train on it!

    Pooh-tastic! I love it! Do u make gf cakes of blue fairies too? Cause I have a 28th bday coming up:) great job you two!

    Great looking cake.

    Welcome to my world or nightmare, Celiac & Lactose. I find the lactose even harder than the GF. But im getting better. There is a great cheese i found at Superstore that is lactose free, has a wrapper that has a cow pattern on it. Also there is a great butter/something spread i use that I really like and you can cook with it to. I will get the name of it if your interested.
    Soygurt is ok, but it not yogurt! Ive also been told to really stay away from Soy and use rice/hemp/almond milk instead. Some people don’t think Soy is good for you, Im still on the fence on that one.

    I can absolutely see how lactose free is harder than gluten free. And you’re right, the lactose free substitutes are not okay. If you have any good products that you can recommend please send them my way. I may be able to introduce some lactose back in my diet later but can always use the help in case they say NO MORE EVER. If that’s the case, I think we may need to have a group hug!

    Love the cake, you guys are awesome!
    Main thing I’m getting from this is that it sounds like you have a fantastic doctor.

    Lactose free products? I use the Silk soy creamer and that is the only soy product I use. Other than that I use a milk that is derived from potato (pink packaging) because I like it better than the rice stuff. Almond milk is tastier but higher calorie. I haven’t found a cheese or a yogurt yet that I will eat (so i just break the rules when i can’t stand it anymore) but I’m going to try and find the one that Karen mentioned above.
