You’ll hear this a lot around our house: “Um, I think we’re having a communication situation” or “Is this going to turn into a situation?” or  simply, “We’re just having a situation”. In our house, as an attempt to stay positive, we have decided to exchange the word problem, with the word situation. Problem, as a word, is innately negative, doesn’t help anything to be a sally sour pants – so make it a little more positive by calling it a situation!

Now that you know this random detail of our relationship – I can profess that, I in fact, have a Brownie Situation. I Heart Brownies. I love them with chocolate chips, with fruit, with nuts, with ice cream, with peanut butter, with everything! Because of this, I am constantly on the prowl for the best GF brownie mix – and I found another good one.

Gluten-Free Pantry Chocolate Truffle Brownie Mix.

Here is what I like about this mix: lots of chocolate in the mix, easy to make, moist and chewy straight out of the oven. I would caution you that they do dry out quickly so make sure they are covered when they’ve cooled off. We found these at Superstore, and we will buy them again.

Note: There is NOTHING lactose free about this mix. If you find that you have the same Brownie Situation that I do, I recommend using lactose free milk and butter in the mix, and then take precaution as necessary!

    Yes these are truly amazing in fact here in Red Deer when we host the Cycling for Celiacs for dinner on the 15th we are making a couple of pans of these to make like Brownie Blizzards from Dairy Queen. Mike at our local Sobeys gave us a box for our display during May’s celiac awareness month and one of the ladies brought them to our next support group meeting – they disappeared quite quickly!!! LOL!!

    Pam, you’re a genius! Brownie Blizzards sound amazing, I think I might have to try and fashion up one of those here – Fiance is going to love it.
