Making Up for the Deprivation

Fiance is deprived. He’s deprived of breads, cereals, baked goods, and now he’s deprived of dairy. He loves me, and I suck.

In an effort to say, “Thanks for loving a crazy lady” I decided to bake a pie. I tried to make something gluten free and lactose free, that would also taste normal.

I made a pecan/pumpkin pie using Gluten Free Pantry Perfect Pie Crust Mix. I was told that it was really good – I think I was being told what I wanted to hear! The crust was okay. A lot dry and a little flaky. The filling…well, I accidentally put almonds in it instead of pecans. Yup, I’m “that guy”.

Sorry I digress. Back to the pie crust mix. I found this at Soby’s and have seen this line of products at Superstore and Co-op. All in all, would I say I loved this mix? No. Is there a better one out there? I believe so, it’s the Kinnikinnick Mix. Will I use this mix again? Absolutely. Why? Because making it from scratch is not an option, Kinnikinnick can be hard to find, and frankly I’m just that inept in the kitchen.

    Here here, I agree with that. Mind you my guy won’t go to the extreme of fiance. We are moving in together and he gets to have a Gluten cupboard. I draw the line at any wheat flour though. He can have his own cereal, cookies and pasta for when im not home for dinner. For the most part though he is gluten free also. He is the best and very supportive. Maybe I should make a pie too after the move.

    How about a weekly “bitching” session for Celiac spouses, where we can whine about all sorts of things?

    You all might need to elect a president and vice-president of this club…maybe a chairman as well. If I may suggest, H.Peter should be “President of Wheat”, Fiance should be “Vice-President of Barley”, and Pam I think you should be the “Chairman of Rye”. Just a thought!
