One of my goals with Glutastic was to create a space for sharing. Living GF is all about knowing. Knowing where to find good GF products, what new GF products are available, and knowing that in groups we are more likely to succeed then we are as individuals. If I may toot my own horn for a moment – Toot Toot – it works.

I have had the pleasure of knowing some great people through this site, and for this I say Thank You to All of You!

And I’d also like to take this moment to thank one of my readers for introducing me to Earth Balance lactose free/gluten free butter. In our discussion she recommended this substitute, and I decided to seek it out and try it. So good. It’s just like the real thing. It bakes like normal butter, it tastes like normal butter, and even better, it looks like normal butter. So excited.

We found this at Sunnyside Market, and I have since then seen it at Superstore. If you are living lactose free as well as gluten free, you MUST go get yourself some of this. It does not disappoint.

I think I just might have to use this, my favourite sandwich bread (have you tried it yet? GO TRY IT) and some LF cheese to make grilled cheese. I can’t tell you why, but there is something about grilled cheese that just makes my world go around.

*Note: From this point on, if I post about something that requires butter, I’m using Earth Balance. The results should be the same for all of us.*
