It occurred to me today that I have neglected the “The Facts” section of this blog for a little while.

Bad blogger.

So today I am giving it the love it needs and we’re going to talk about TEFF.

Teff seeds are the smallest grain in the world, measuring only 1/32 of an inch in diameter, and taking 150 grains to weigh as much as one grain of wheat. Since the seeds are so tiny, their bulk is composed primarily of the bran and germ, which are the most nutritious part of any grain. It is especially popular in Africa, yet remains relatively unknown in the Western world. Some of the nutritional benefits of teff include:

Different varieties of teff can have either a slightly sour or slightly sweet taste similar to molasses. Teff can be ground into flour, eaten as grain in soups or stir fry, added to baked goods, combined with other foodstuffs to make grain burgers, or sprouted for added nutrition. The grain and flour should be kept in a cool, dark place to increase longevity.
